  6. We want the tomato to be fixed and oregano to the base and at the same time get a crunchy base similar to that of professional pizzas.
  7. We leave it for only 2-3 minutes, take the pizza out of the oven and raise the temperature again (250 º C) for the final baking.
  8. We distribute the chosen cheeses on top of the base we just took out of the oven.
  9. First sprinkle with grated Parmesan cheese. We add the remaining pieces of cheese, strategically distributed on the surface.

Baking and final pizza presentation four cheeses

  1. We finish with the mozzarella cheese spread over all the holes so that when it melts it is spread over all the holes in the base. The contrast of the cheeses, soft and powerful will be great.
  2. Bake at 230 ° C for about 10-12 minutes in the middle tray with temperature up and down. Although the time will usually depend on your oven, the thickness you have given the dough and the amount of filling.

Four Cheese Pizza Recipe

When Andris Lagsdin, who invented the Baking Steel (kind of a big deal) offered to send me some of his 72 hour dough to try, I was psyched. The 72 hour dough is currently on kickstarter and I can & # 8217t stress enough how perfect it is for someone like me. I won & # 8217t have to feel any more dough-shame just because I don & # 8217t have the kitchen / attention span / time to make dough myself instead of buying it at the store. Homemade dough, delivered to my door? Amen.

Once I knew the 72 hour dough was on its way, I got to planning the toppings I & # 8217d use. I had a hunk of Vermont Creamery goat cheese in my fridge that needed to be used up, so I figured I might as well shoot for the stars and try to recreate Frank Pepe & # 8217s four cheese pizza recipe!

Pepe & # 8217s actually posted this video a while ago which shows their four pizza cheeses being made. This led me to my next adventure- deciding to slice my own mozzarella. At first I used a knife, which was a fail- I couldn't get the cheese slices thin enough. Luckily I remembered I had a cheese slicer like this one laying around the house, which got the job done a lot better. Anyway here & # 8217s the recipe!
