I needed something quick, I used the puff pastry I had in the freezer and got to work.

1 kg of hard pears
1 packet puff pastry
300 gr ground almonds
3 tablespoons honey
1/2 l white wine
200 gr sugar
1 yolk
mint leaves

Peel the pears with a vegetable knife without cutting the tails.

Put the wine, sugar, cinnamon (powder or bars) and cloves in a saucepan. Put on the fire and when it boils add the pears.

Let them boil until the fork enters them easily then take them out on a plate and let them cool.

Remove the back of the pears very carefully so as not to pierce the pear.
Mix the coarsely ground almonds with the honey and fill each pear with the obtained paste.

We cut the puff pastry into thin strips and wrap it around the pears until we reach the tail. Make sure that when you put the puff pastry, the pears are slightly moist so that they do not come off and fall off.

Beat the yolk and grease the entire surface, including the tail, to make it look beautiful.

Put the pears in the tray lined with baking paper.

Put in the oven, over low heat, until the puff pastry is nicely browned.
Allow to cool then serve.
