I heated a little oil in a deeper pan and first fried the turkey legs until they were nicely browned on all sides. The thighs were well wiped with napkins before frying (so as not to splash). I chopped the onion and garlic and added them to the pan with a pinch of salt. I sautéed the onion over low heat until it became glassy, ​​without browning.

Because paprika burns easily and becomes bitter and indigestible, it does NOT fry! First I extinguished everything with 2 cups of hot water (to have liquid up to 1/2 of the thighs) and only then I put the 2 tablespoons of sweet paprika (plus a teaspoon of hot paprika), the rest of the salt and black pepper ground.

As I said at the beginning, turkey legs boil a little harder than chicken legs. I quickly prepared the dough for the flour dumplings by mixing the 2 eggs with flour, salt, milk and 1 tablespoon of oil. I let it rest for 20 minutes so that the flour swells well.

With a tablespoon of soup I formed the flour dumplings. Before taking the dough from the bowl, I soaked the spoon in the sauce from the pan. Spoon only 1/3 full length with dough because the dumplings will swell when boiled. They must be elongated, spindle-shaped. After each dumpling, soak the metal spoon in the hot saucepan. You need speed at this stage to boil all the dumplings as soon as possible.

I let everything boil for approx. 15 minutes, without lid, over medium heat, until the dumplings are done. I put out the fire and covered the pan with the lid. I let the turkey sit for a while, to catch its breath.


Recipes: Turkey cutlet with sour cream and fresh tagliatelle

In a saucepan with boiling water, put the tagliatelle to boil, and after they have boiled, drain the water. Peel a squash, grate it and boil it for 30 minutes. Heat a frying pan with 2 tablespoons of olive oil and when it is very hot, add the boiled carrots.

In another pan, add peanut oil and fry the turkey chop - when it is ready, remove from the pan and heat the cream over low heat, over which the carrots will be added. On each plate, make a bed of tagliatelli and then put a state of sour cream mixed with carrots and on top a piece of turkey cutlet. It is recommended to be served hot!

1. Put a deeper pan with a tablespoon of olive oil on high heat. Cut the turkey breast into strips and fry it.

2. Cut the courgettes and bell peppers into thin strips and add them over the turkey, after it has browned. Leave everything for about 7 minutes (the vegetables should not be completely cooked, but remain a little crispy), then put the pan aside.

3. Mix the egg yolks together with the sour cream and add the composition lightly over the turkey strips.

4. Leave the pan on low heat, mix lightly for about 5 minutes, then add salt and pepper. Good appetite!
